Hemp Tofu Ceviche

Tofu Ceviche

1 cup cubed TEMPT Hemp Tofu
1/2 cup celery (about 1 large rib)
1 cup diced tomato (about 1 large)
1 cup fresh mango (about 1 medium)
1 cup cubed avocado (1 avocado)
2 Tbsp finely chopped red onion
2 Tbsp chopped fresh cilantro
3 – 4 Tbsp fresh lime juice
1/2 tsp Celtic sea salt or Himalayan salt


Dice tofu into very small pieces.

Likewise, dice celery, tomato, mango, avocado, onion, and cilantro into same size pieces.

Gently combine in bowl and toss with a little lime juice, and salt to taste. I started with 1/4 tsp salt and keep adding to taste.

Keep refrigerated. This mixture is even better after it marinates together for a bit.

Eat as you would a salsa — dipping with blue corn tortilla chips or pita chips
